I sat down with the flyers and everything this morning to plan what we're eating this week. J asked if it was actually going to happen. Sigh. Sometimes I have great plans and no ambition. This will not be one of those weeks.
I'm trying to wrap up the first issue of the 2006 Magazine Challenge in a meaningful way, and also trying to make a couple of things from Pinterest. That should happen in the next 2 days, with some tried and trues during the week that aren't hard to make (or eat, for that matter).
We are also having Home Church at our place right now, so I've included a couple of desserts for snack time. The rest we will eat for dessert this week.
K....easy weeknight favourites, experiments on the weekend. Sounds like a plan when there's so little on TV now that the Olympics are winding down.
Here's the plan for the next week:
Saturday: Something I'm not inclined to tell you about yet, but it's part of the big reveal on March 10th. We'll eat them with salad and Garlic Bread.Easy enough. Bring it, end of February.
Sunday: Potato and Onion Frittata for lunch, and Pizza for dinner.
Monday: Salmon is on sale this week, so marinated salmon, rice and broccoli
Tuesday: Chicken and Black Bean Enchilada Pie made with pinto beans, because that's what's in the freezer.
Wednedsday: Leftovers
Thursday: Burgers, Chips and Pickles
Desserts: Cherry Cheesecake Cookies and Lime Squares
I understand! It's rarely ambition that I lack, but usually logistics. We are crazy busy and sometimes it's predictable and sometimes not. We need to buy a new dining table for our house and we have a great coupon (expiring thurs) for a place where we might get one, but we have to run about 3 errands tonight to decide what we're getting, so I doubt there will be time to sit down and eat the yummy black bean quinoa casserole I made last night (before we decided to table shop).
