Baked Fish en Papillote

So.
J has been told to lose weight.  Frankly, I probably have more to lose than he does.  We find that eating at home has helped us in the past year to shed a *little*.  I can fit into clothes that didn't fit this time last year, but there's a long way to go.
One thing that he has been told to eat is fish; at least twice per week.  I'm not a fan.  I've told J that I will try really hard to cook fish once per week.  I spent some time on Pinterest, looking for possible recipes.  I polled my friends on facebook for the ways they like to cook fish.  I also spent some time reading.
A cookbook that I have from some point in my past is put out by the Canadian Diabetes Association called, Choice Menus.  We have spent time studying the meals, looking for things we like and things we'd like to try.  This was our first choice out of the book.
I present to you now Baked Fish en Papillote:


Ingredients:
200 g fish fillets (haddock or halibut)
1/2 c finely chopped carrot (1 medium)
4 large mushrooms, sliced
1 green onion, chopped
1/4 c chopped parsley
1/2 Tbsp lemon juice
1/2 Tbsp melted butter
1/2 Tbsp dried thyme
Salt and Pepper to taste

Method:
1.  Cut 2 sheets of aluminum foil into squares 2 inches larger than the fish fillets.  Cut fish into 2 equal sized pieces; place in centre of the foil. 
2.  Distribute carrot, mushrooms and onions evenly over the fish
3.  Combine parsley, lemon juice, margarine, and seasoning.  Spoon over fish and vegetables.  Fold long ends of foil twice so fish is tightly enclosed.  Bring ends together and fold twice; place on baking pan.
4.  Bake in 400F oven for 20 to 25 minutes, or until fish flakes easily with a fork and vegetables are tender.  Place packages on dinner plates for each person to open at the table.

This went together quickly and simply.  My modifications were few.  I prefer to buy fish fresh, rather than frozen, so J and I bought 2 100g fillets of sole at the fish counter.  This was a one night meal for us.  I still did the whole carrot and onion, but cut the lemon juice and butter in half with the herbs from the original recipe.  Modifications are incorporated above.
Here is J's portion, ready to be wrapped.  I don't like mushrooms.  This was great for personalizing as well.
Here it is at the end of 20 minutes.  There's fish in there.  Really.
The menu is for one foil pack, 1 c of rice, sliced tomatoes and cucmbers with low calorie dressing, 1 c of strawberries, and a 1/2c of milk.  I subbed couscous for the rice (and I didn't leave J to unwrap his own fish at the table), but the meal was good.  Sole is not super fishy in flavour, and the herbs and onion definitely dominated.
It's easy enough for a weeknight.  I could even make these and leave them for J to put in.  I'd say this was a win.
