Secret Recipe Club: Apple Cider Bread

So.
It's time for the Secret Recipe Club again!  This snuck up on me this month:  between #10DaysofTailgate and the craziness that is my life, I suddenly realized that I was supposed to have made a recipe for this too and I really didn't have a whole lot of time to get it done.
I try not to be as day late and dollar short as I seem to be in my own eyes.
This month, I was assigned the blog Dancing Veggies.  Amanda is an ovo-lacto vegetarian, and has tons of interesting sounding recipes.  The problem?  My husband is suspicious of entrees that don't include animal-based protein.  When I announced that I had been assigned a vegetarian blog, he asked if I was going to make a dessert.
Time ran short, and I decided that I wasn't fighting with him on this one. But when I started looking at potential recipes, I found this bread and thought that it just sounded like fall.
I haven't been on an apple kick to celebrate fall this year, despite the things I've pinned on Pinterest.  Perhaps this is the beginning.  Today was the first day where I actually thought that I might need to wear socks and shoes.  Fall is close, and my pedicure is going into hiding.  Sigh.
To celebrate the beginning of October, and the fruits of fall, I present to you now Dancing Veggies' Apple Cider Bread:

Ingredients:
2-1/4 tsp bread machine yeast (1 pkg)
3c + 2 Tbsp flour
1/4 tsp salt
1/4 c white sugar
2 Tbsp butter
1-1/2 Tbsp honey
1 c apple, finely diced
1/2 c apple cider
1/2 c water

Method:
1.  Add all ingredients to bread machine pan in the order specified in the manual.  Bake on basic medium white setting.

I hemmed and hawed about peeling the apple, but finally decided to.  I didn't think that the skin would break down in the bread machine like the flesh of the apple would.
I neglected to add the extra 2 Tbsp of flour (I'm pretty sure...the tablespoon measure didn't end up in the sink) so I had a really wet, sticky dough.  Wet dough over rises.  Like the loaf pictured here.
But over risen or not, isn't this pretty?  And it smelled so good.  The apple breaks down completely, and the bread is sweet - perfect for breakfast toast with a little jam.
Or just a little butter and eaten fresh while still warm.  Delicious.  Next time, I'd add a little cinnamon, but it's good like this too.  Thanks Amanda!

  1. I'm glad you (and your husband) enjoyed it! I normally keep the skin on as then there are little bits of apple in the bread - but either method is awesome and delicious :-)

  4. Ooh that does look good. Think we finally got rid of our breadmaker because whenever I've made bread lately, it's been by hand ... but maybe I can adapt for manual methods?
