Secret Recipe Club: Impossible Spinach Pie

Yeah, it's been a while.  But that's okay, because I'm back, and with a scary good recipe.
Welcome to the first Monday of the month, also known as Secret Recipe Club Group A Reveal Day!  Remember the Secret Recipe Club?  It's a group of bloggers who get together, exchange blogs, make something in secret, and all reveal what we made from each other's blogs at the same time.  Very fun!  This month, I was thrilled with my assigned blog, Shockingly Delicious.
On the Facebook page for the Club, Dorothy and her nemesis Sally choose and brag about their assignments every month.  I'm awed by their speed and dedication to the feud.  It was so much fun to go through Dorothy's blog and see the kinds of things she makes and shares.
I considered lots of options - there are so many!  I looked through "Cheap and Easy" for inspiration, and considered more carbs with her breakfast options before finally settling on a retro favourite.
Impossible Pies were a revolution with Bisquick baking mix in the 1970s.  Both savoury and sweet, you put the filling in the pie plate, pour a batter of eggs and Bisquick over and bake; and amazingly, they turn into a quiche-like pie.
Dorothy had a ton of options.  I want to make them all:  Enchilada, Lasagna, and finally what I made for dinner: Spinach.  She even had a recipe to make a small batch of Bisquick-type mix so I wouldn't have to buy a box!  I was sold.
I present to you now from Shockingly Delicious, Impossible Spinach Pie:

Ingredients:
1 Tbsp oil
1 onion, finely chopped
3 cloves garlic, minced
10 oz fresh baby spinach
3 oz crumbled feta cheese
1 c milk
3 eggs
1/2 c Bisquick mix (recipe to follow)
Zest of 1 lemon
1 Tbsp lemon juice
1 Tbsp fresh chopped oregano
1-1/2 tsp fresh chopped dill
1/4 tsp nutmeg
1/4 tsp black pepper
1/4 c Parmesan, grated

For the Bisquick Mix
1 c flour
1-1/2 tsp baking powder
1/4 tsp salt
1 Tbsp oil

Method:
1.  Make the Bisquick Mix:  In a small bowl, combine all ingredients.  Mix, using an electric beater to ensure the oil is well dispersed.  Set aside.
2.  Preheat oven to 350F.  Lightly grease a pie plate.  In a large skillet, heat oil and cook onion until it is soft and starting to brown.  Add garlic and spinach, stirring to wilt.  Remove from heat when wilted.  Spread spinach in an even layer on the bottom of the pie plate.  Sprinkle feta cheese over spinach.
3.  In a medium bowl, beat together milk, eggs, and herbs.  Add Bisquick mix and beat until just combined.  Pour over spinach and feta.  Sprinkle with Parmesan cheese.
4.  Bake Pie at 350F for 35 minutes, until golden.  Let stand 10 minutes before slicing to serve.

This went together quickly.  I have to admit, I eyeballed the cheese amounts that went into this.  We love us some cheese around here.  I also bought the feta in the container with the convenient shaker feature.  I didn't use the whole container.
Then pour this batter over, and it doesn't look at all like it will become a pie.  But wait!!!
It will!!
This smelled so amazing.  I have the Gourmet Garden squeezy tubes of fresh herbs which I used to make this, and they were so simple to add.
And it tasted as good as it looked.  Now I want to make more.  Thanks Dorothy!

  2. I had the other have of the famous Dorothy and Sally duo this month. They are so much fun!

    This looks amazingly yummy. I especially love being able to make the 'Bisquick' for myself because I really don't buy it. Except for a few times in the past to make some of these impossible pies. I am definitely going to have to check out Dorothy's list of recipes. Though I don't know if it's possible to improve on spinach and feta.

  5. There is a problem with reading food blogs before eating breakfast, I want to make all the recipes. This looks wonderful. I can't even remember the last time I made an impossible pie, it's been way too many years, but I think it's time to do one again. Great choice.

  7. I love Dorothy's blog!!! What's so wild about your pick this month is when I was assigned her blog when we were both in Group D, I chose one of her impossible pies too!!!! They're so fun to make (and eat). GREAT pick this month!! I love this one!
