Pintertest Kitchen: Apple Fritter Cake

So.
I've been in a rut, and I haven't been cooking.  That's kinda changed this week, and this cake got the ball rolling.  I pinned this from my friend Lee-Ann.  I've pinned a lot of great things from Lee-Ann.  I've made lots of them too.  Maybe I should have saved Lee-Ann a piece of this cake.  J's piece.  Cause mine disappeared quickly every night.  I'm just saying.  Here's the pin:
I present to you now Nerdy Baker's Apple Fritter Cake:

Ingredients:
Filling:
1 heaping cup of sliced apples
1/3 cup sugar
1/4 teaspoon cinnamon
2 tablespoons cornstarch
2 teaspoons water

1/2 cup brown sugar
1/2 teaspoon cinnamon

Cake:
1/3 cup butter
3/4 cup sugar
1/2 cup applesauce
1 teaspoon vanilla
2 eggs
2 1/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1 cup sour cream

Glaze:
2 cups powdered sugar
1 teaspoon vanilla
6 tablespoons milk
Method:
Filling:  
1.  Combine apples, sugar, water, cinnamon and cornstarch in a small saucepan.  Cook on low heat for 5 to 7 minutes, stirring constantly until the sauce is thickened and the apples are a bit soft.  Set aside to cool.  In a small bowl, mix the brown sugar and cinnamon together until well combined and set aside.

For Cake: 

1.  Preheat oven to 350 F.  Grease a 9x13" baking dish.  Set aside.
2.  Cream butter and sugar until light and fluffy.  Add applesauce and vanilla, and mix till combined.  Add the eggs, one at a time, beating well after each addition.
3.  Sift the dry ingredients together.  Add the dry ingredients to the batter in three parts, alternating with the sour cream, beginning and ending with the dry ingredients.  Beat until just combined.
4.  Spoon half of the batter into the prepared pan.  Spoon the cooled apple filling over the batter carefully and spread as evenly as possible.  Sprinkle 2/3 of brown sugar/cinnamon mixture over apples and cover with the rest of the batter.  Sprinkle the rest of the brown sugar cinnamon mixture over the top.
5.  Bake for 45-55 minutes, until a toothpick inserted into the center of the cake comes out clean.

For Glaze:  

1.  While the cake is baking, make the glaze.  In a bowl, mix the powdered sugar, vanilla, and milk until the glaze is desired consistency.  

2.  When the cake comes out of the oven, immediately pour over hot cake.  Try to pour as evenly as possible.  Let the cake sit for awhile for the glaze to set.

So really, you start by making apple pie filling.  You stir this in the pan at the beginning, and think, "2 TEASPOONS of water?  Who wrote this??"  And then the apples release their juices and you start to make something that makes sense.  It's like lemon pie filling in that you're stirring, wondering what will happen, and then it does.  Trust me.
Here's my cake batter.  Doesn't it look tasty?  I had started mixing when I realized that I had no applesauce.  So I did what any baker would do, and reverse subbed oil for the applesauce.  Yeah.  You heard me.  For those of you with whom I'm friends on Facebook, you'll already know that I ate deep fried butter this week too.  it's been a banner week all the way around.
Here's the hot cake, nicely glazed.  This is the first time I tried baking in the new oven, and I couldn't find my oven thermometer.  The cake was done to overdone at 45 minutes.  I think the oven runs hot.  I need to find that thermometer.  It wasn't burnt, though.  Just as well.  The house smelled amazing when this came out.
Yup.  Yummy cake.  You can see my blurry fresh pedicure in the background in my neon green and hot pink flip flops.  The lighting in the family room isn't great for pictures, but I think the cake looks good all the same.
