#TripleSBites: Molten Mocha Cakes

So.
It's the last day of #TripleSBites - and it's been way fun!  Make sure to visit the other bloggers for their spicy, saucy and sexy recipes to celebrate the end of the event!!
During the Twitter party last week, one of the the questions was about whether a dessert should be to share, or individual.  My response was always individual.  I love chocolate lava cake, and this was one to add to my collection from the Magazine Challenge.  Individual desserts from Everyday Foods have worked in the past, and this is lava cake.  How could that be bad?
From the January/February 2007 issue of Everyday Food, I present to you now Molten Mocha Cakes:
Ingredients:
2 Tbsp butter
2 oz semisweet chocolate
1/3 c icing sugar
1 egg, plus 1 egg yolk
1 tsp instant coffee granules
pinch of salt
3 Tbsp flour

Method:
1.  Preheat oven to 400F.  Grease 2-7 oz ramekins.  In a small microwave-safe bowl, melt butter and chocolate.  Stir until smooth.
 Set aside to cool slightly.
2.  In a medium bowl, Stir together sugar, egg, yolk, coffee and salt.  Stir in chocolate mixture.  Add flour and stir just until combined.
3.  Divide batter between ramekins.  Bake at 400F for 12 minutes, until a toothpick inserted 1/2" from the edge comes out clean, and inserted in the middle comes out wet.  Let cool for 10 minutes, and then turn out onto plates to serve.

These go together quickly, and sadly for me it's made of pantry staples.  The batter is deep chocolate, and the coffee just enhances the flavour.

They turned out perfectly too.  I was afraid that the filling might tear the top as I tipped it out, but not at all.
But the center was warm, melty and delicious.  A lovely way to end a fun week!
