Easy Weeknight Meal: Fajita Salad

So.
My birthday is this week.  It hasn't happened yet, and we're going out to celebrate.  But the celebrations have really already started on the mountain.  We had cake and ice cream and presents with my parents this week.  Well, Mom, J and I had cake.  Homemade pineapple upside down  yum.  Dad had Boost.  Cancer is evil.
We also had presents.  I got a dehumidifier for the basement and this book:

Yeah, I can't spin the picture.  But it's still exciting!  400 pages of new recipes.  I spent Sunday night on the couch reading titles to J of things I want to make.  I'm excited about cooking.  Even if there's no time.
Enter this recipe.  Not a whole lot of time to put together, and with some garlic bread, a wicked filling meal.  I present to you now The Looneyspoons' Collection Eata Fajita Salad:


Ingredients:


1/4 cup light sour cream
1-1/4 tbsp lime juice
1/2 tsp sugar
1/2 tsp taco seasoning
1 tsp oil
350 g boneless skinless chicken breasts, cut into thin strips (or use chicken filets when they go on sale!!)
1 cup sliced red and green bell pepper
1/2 small red onion, thinly sliced
1/4 cup salsa
4 cups baby spinach
1/4 cup shredded old cheddar cheese

Method:
1.  In a small bowl, combine sour cream, 3/4 tsp lime juice, sugar, and taco seasoning.  Refrigerate dressing until ready to use.
2.  Heat oil in a large non-stick pan.  Add chicken, cook and stir until no longer pink.  Continue to cook until lightly brown.  Add peppers and onions.  Cook and stir.  Add salsa and cook.
3.  Stir in remaining 1-1/2 tbsp lime juice, and mix well.  Remove from heat.
4.  To assemble salad:  Divide spinach between plates.  Top with warm chicken mixture.  Spoon dressing over salad.  Sprinkle with cheese.  Serve immediately.

This was lovely.  J didn't think that it would be enough, but it was.  We both like spinach, so I subbed that from the romaine in the original, and I used taco seasoning because I didn't have chili powder.  It added a nice kick.I also probably cooked the peppers and onion longer that I could have, but there was still a nice crunch.
J told me I could make this again.  I had dinner on the table in less than 30 minutes, with a side of garlic bread.
Yum on a plate.  One recipe down, lots to go.  I'm making another tomorrow night.  Hooray!  I may kind of have my cooking groove back!
